Sushi Chef

Park Hyatt is seeking a Sushi Chef for its culinary / japanese cuisine / hospitality operation in Dubai, United Arab Emirates. This full-time position suits a professional who can deliver reliable results, communicate effectively and maintain high standards in a luxury hospitality environment. The role requires ownership of daily priorities, teamwork and a consistent focus on guest experience, quality and operational efficiency.

Key Responsibilities

• Prepare and present sushi and sashimi to high standards of quality, freshness, consistency and presentation.
• Handle premium seafood correctly, including receiving, storage, trimming, filleting and preparation according to food-safety procedures.
• Prepare sushi rice, sauces, garnishes and other components with accurate texture, seasoning and portioning.
• Maintain high standards of knife work, cutting precision, plating and visual presentation.
• Organize mise en place and ensure ingredients, tools and equipment are ready before each service period.
• Work efficiently with the culinary team to meet service times while maintaining consistency and quality.

Requirements

• Minimum 2–3 years of relevant Sushi Chef experience in a reputable restaurant or luxury hospitality environment
• Relevant hospitality / culinary qualification preferred
• Strong communication, teamwork, organization and problem-solving skills.
• Professional conduct and ability to work flexible shifts or peak periods when required.
