Sommelier, Carbone – Atlantis The Royal

The Sommelier will contribute specialist wine expertise to a premium dining environment, helping guests discover wines that complement their preferences and menu selections. The position includes wine-list development, purchasing support, stock rotation, cellar organization and staff education. The ideal candidate combines technical wine knowledge with polished service, commercial awareness and the ability to create memorable, personalized guest experiences.

Key Responsibilities

• Recommend wines confidently based on guest preferences, menu selections, occasion and desired style while providing knowledgeable and approachable service.
• Work with beverage leadership to update wine selections, support ordering and maintain accurate stock rotation and availability.
• Ensure wines are stored appropriately and served at suitable temperatures using the correct glassware and professional presentation standards.
• Apply food-and-wine pairing knowledge to enhance the dining experience and introduce guests to suitable premium selections.
• Identify appropriate opportunities to increase beverage revenue through thoughtful recommendations without compromising the guest experience.
• Support team knowledge through informal coaching and contribute to maintaining high standards of wine service, cellar organization and product knowledge.

Requirements

• At least two years of experience in a luxury restaurant or hotel environment.
• WSET Level 2 qualification or equivalent wine education.
• International experience is advantageous, particularly in Italian fine dining or premium restaurant operations.
• Experience with wine lists, wine stock management and staff training is preferred.
• Excellent communication, product knowledge, guest-service and upselling abilities.
