Assistant Operations Manager, Gastronomy – Atlantis the Royal

The Assistant Operations Manager at Gastronomy is the second-in-command for outlet operations, overseeing the floor and helping the Restaurant General Manager maintain high standards throughout daily service. The position requires strong all-day dining experience, commercial understanding and the ability to coach colleagues. The successful candidate will monitor guest experience, team performance and profitability while ensuring operational plans are translated into consistent service. Key Responsibilities

• Oversee floor operations and support the Restaurant General Manager in maintaining food, beverage and service standards.
• Monitor guest, people, product and profit KPIs and coordinate corrective actions when results or service standards fall short.
• Train, coach and motivate colleagues through clear briefings, regular feedback and practical development support.
• Review operating results, costs and profit-and-loss information to support budgeting and commercial decisions.
• Coordinate staffing and daily priorities to maintain service quality and efficient use of resources.
• Resolve guest concerns professionally and collaborate with kitchen and hotel departments to support smooth operations.

Requirements and Qualifications

• At least five years of relevant all-day dining or related experience is expected.
• Previous international experience in a five-star hotel is preferred.
• A solid understanding of business performance, commercial priorities and overall P&L is essential.
• Strong leadership, coaching, communication and guest-service skills are required.
• Candidates should be comfortable making decisions in a busy restaurant environment and balancing service with profitability.
