Description
The Head Baker leads bakery production at Madinat Jumeirah Resort and is responsible for maintaining product quality, operational standards and team capability. The role combines hands-on baking expertise with menu planning, HACCP compliance, coaching and continuous improvement in a luxury five-star environment.
Key Responsibilities
- Oversee bakery production and ensure compliance with departmental policies and service standards
- maintain HACCP and food-safety requirements
- support menu planning and standard recipe development
- monitor food quality across outlets and banquets
- coach senior chefs and help develop their teams
- recommend equipment and production improvements
- identify market trends and guest preferences
- control consistency and presentation
- and support efficient use of ingredients and resources.
Requirements
- Candidates should have a bachelor’s degree in catering, hospitality or a related field, strong English communication skills, sound knowledge of hygiene, health and safety, cultural adaptability and at least five years of international baking experience in five-star hotels or restaurants.
