Description
Kitopi is seeking a Sous Chef – Indian Cuisine in Dubai to supervise Indian kitchen and Tandoor operations and support consistent execution of authentic dishes. The position requires strong hands-on expertise in Tandoor cooking, including naan, roti, kebabs, tikka and related specialties. The Sous Chef will train and supervise CDPs and Commis Chefs, monitor quality, stock and wastage, and coordinate daily production with the Head Chef. Strong leadership and food-safety knowledge are essential.
Key Responsibilities
- Supervise daily Indian kitchen and Tandoor operations.
- Prepare and oversee authentic Indian dishes with a strong Tandoor focus.
- Manage production of naan, roti, kebabs, tikka and other Tandoori specialties.
- Maintain consistency in taste, quality, presentation and portion control.
- Train and supervise CDPs, Commis Chefs and other kitchen team members.
- Monitor food quality, stock, wastage and kitchen hygiene.
- Ensure compliance with food-safety, HACCP and company standards.
- Coordinate with the Head Chef on menu execution and daily production.
Requirements
- 5–7 years of experience in Indian cuisine, preferably at Sous Chef level.
- Strong hands-on Tandoor experience is essential.
- Excellent knowledge of Indian spices, marinades, breads, kebabs and Tandoori techniques.
- High-volume restaurant or hospitality experience.
- Strong leadership, organization and team-management skills.
- Good knowledge of food safety and HACCP requirements.
