Commis Chef – International Cuisine

Kitopi is seeking a Commis Chef – International Cuisine in Dubai to support food production in a professional central-kitchen environment. The role focuses on maintaining recipes, standards, consistency and accuracy while completing daily production safely and efficiently. Responsibilities include stock preparation, food storage, temperature monitoring, labelling, rotation, sanitation and equipment checks. Candidates should understand international cuisine, communicate effectively in English and be comfortable working independently as well as within a team in a high-volume operation.

Key Responsibilities

• Maintain brand recipes, food consistency and production accuracy.
• Complete daily production according to schedules and required standards.
• Establish appropriate par levels to help avoid overproduction.
• Organize coolers and freezers according to food-safety standards.
• Check equipment condition and complete temperature logs as required.
• Maintain food quality, appearance and presentation.
• Follow clean-as-you-go and sanitation procedures.
• Break down food and work areas after production and at the end of shifts.
• Follow correct food rotation, dating, labelling and covering procedures.
• Use cleaning supplies according to established procedures.

Requirements

• Previous experience in a similar environment is preferred; high-volume catering experience is an advantage.
• Strong understanding of international cuisine is mandatory.
• Strong verbal, listening and written communication skills.
• Ability to work independently and as part of a team.
• Culinary or food-management education/certification is preferred.
• Good English communication is essential.
