Description
Kitopi is recruiting a Chef de Partie – Pizza in Dubai to manage a pizza station and produce consistent, high-quality products during daily service. The role covers dough preparation, portioning, proofing, stretching, hand-tossing, toppings and baking while maintaining HACCP and food-safety standards. The Chef de Partie will also support production schedules, minimize waste and guide Commis Chefs when required. Experience in high-volume restaurant, commissary or central-kitchen operations is preferred.
Key Responsibilities
- Prepare, portion, proof, stretch and hand-toss pizza dough to standards.
- Prepare pizza bases, sauces, toppings and supporting ingredients.
- Maintain consistent dough quality, taste, portioning and presentation.
- Operate pizza ovens and kitchen equipment safely.
- Follow daily production schedules and reduce unnecessary food waste.
- Maintain food safety, hygiene and HACCP compliance.
- Keep the workstation clean, organized and ready for service.
- Support and guide Commis Chefs when needed.
Requirements
- Minimum 2–3 years of experience as a Chef de Partie or similar position, preferably in pizza production.
- Strong hands-on experience with hand-tossed pizza and dough preparation.
- Good knowledge of dough fermentation, proofing, portioning, stretching and baking.
- High-volume restaurant, commissary or central-kitchen experience is preferred.
- Strong attention to detail, teamwork and communication skills.
- Ability to work flexible shifts, including weekends and public holidays.
