Assistant Manager, Carbone – Atlantis The Royal

Atlantis The Royal is hiring an Assistant Manager for Carbone. The position supports restaurant management in delivering high standards across the food and beverage operation while helping the outlet achieve its commercial and guest-service objectives. The Assistant Manager will coach colleagues, monitor service performance, contribute to recruitment and stock control, and help maintain efficient daily operations.

The role is suited to an experienced food and beverage professional from a luxury hotel or recognised restaurant group. It combines hands-on floor leadership with operational analysis, guest feedback management and attention to profitability. The manager will work with colleagues across the restaurant to keep service, product quality and operating procedures consistent.

Key Responsibilities

• Support the restaurant manager in overseeing daily operations and service standards.
• Coach, train and motivate colleagues and contribute to recruitment activities.
• Review shift performance, staff standards and departmental key performance indicators.
• Assist with stock control, ordering and inventory of operational tools and equipment.
• Monitor food and beverage quality, portioning and presentation and escalate major issues.
• Record guest preferences accurately in the 7rooms reservations system.
• Review feedback, respond to concerns and support improvements in guest satisfaction.
• Coordinate reservations and support outlet profitability, cost control and operational audits.

Requirements and Qualifications

• At least three years of experience in a supervisory or junior-management food and beverage role.
• A background in a high-end dining environment, luxury hotel or renowned restaurant group.
• Strong communication skills and the ability to engage colleagues at different levels.
