Assistant Restaurant Manager – Sand & Koal

The Assistant Restaurant Manager at Sand & Koal supports the Restaurant Manager in delivering a professional, efficient and guest-focused operation at Emirates Palace Mandarin Oriental, Abu Dhabi. The role covers service standards, team development, outlet revenue and cost control, inventory, reporting, training, guest satisfaction and daily restaurant execution.

Key Responsibilities

• Lead by example and ensure employees consistently deliver courteous and professional service.
• Maintain a clean, organized workplace and demand high service and setup standards.
• Ensure team members understand the outlet concept, products and service expectations.
• Support menu design and organize tastings of daily dishes and new menus.
• Drive upselling and ensure employees are knowledgeable about available products and alternatives.
• Use the outlet POS system and produce operational reports and performance analysis.
• Support cost control, revenue generation and outlet profitability.
• Assist with budget preparation and conduct regular inventory of operating supplies and equipment.
• Maintain correct settlement of sales and manage outlet floats when required.
• Build and maintain a trained workforce, flexible scheduling and effective payroll control.
• Monitor wastage, supplier activity and product quality and support continuous improvement.
• Handle guest enquiries and complaints and ensure proper follow-up.
• Conduct pre-shift meetings, staff training and performance checks.

Candidate Profile

• Minimum 2 years in the same role within a luxury property; resort experience is a plus.
• Bachelor's degree in Hotel Management is preferred.
• International work experience across at least two major regions is preferred.
• Hotel or bar pre-opening or renovation experience is preferred.
• Self-confidence, integrity and trustworthiness.
