Captain – Sand & Koal

The Captain at Sand & Koal supervises a restaurant section and helps ensure smooth service at Emirates Palace Mandarin Oriental, Abu Dhabi. The position combines section leadership, guest interaction, order taking, upselling, billing and cash-handling procedures, training support and operational coordination during regular and peak service periods.

Key Responsibilities

• Coordinate opening and closing duties for the assigned restaurant brigade.
• Assist the Assistant Manager with planning based on reservations and special events.
• Check operating equipment and furniture for cleanliness, condition and functionality.
• Assist with training waiter/waitress and junior service colleagues.
• Ensure the assigned restaurant section is fully and correctly set before service.
• Welcome guests, assist with seating and present menus and beverage lists.
• Recommend appropriate products and support higher average checks through professional upselling.
• Take food and beverage orders and ensure timely service.
• Follow billing, checking and cash-handling procedures accurately.
• Monitor table resetting and section cleanliness during service.
• Build positive guest relationships and handle complaints in coordination with restaurant management.
• Attend briefings and training and maintain professional grooming standards.

Candidate Profile

• Previous experience in the same role in a luxury hotel is preferred.
• Resort experience is a plus.
• Strong communication and customer-service skills.
• Senior School qualification or equivalent is an advantage.
• Russian-language proficiency is considered an added value.
