Commis 1 & 2 (Afya Restaurant)

Shangri-La Group is recruiting Commis 1 & 2 for Afya Restaurant at Traders Hotel, Qaryat Al Beri, Abu Dhabi. The position supports the culinary team with food preparation, mise en place and daily kitchen production while maintaining consistent quality, presentation, portion control and food-safety standards.

Commis chefs will work under the direction of senior culinary colleagues and gain practical experience in a professional hotel kitchen. The role requires discipline, willingness to learn, attention to detail and the ability to maintain high standards of hygiene and organization during busy service periods.

Key Responsibilities

• Assist with daily food preparation, mise en place and cooking as directed by the Chef de Partie or senior chef.
• Prepare ingredients and dishes according to standard recipes and portion requirements.
• Maintain consistent food quality, presentation and portion control.
• Keep kitchen stations, equipment and work areas clean, organized and hygienic.
• Store, label and rotate food products correctly to protect quality and minimize waste.
• Follow instructions, recipes, standard operating procedures and food-safety requirements.
• Support senior chefs during service and work effectively with the wider culinary team.
• Follow HACCP, sanitation and hotel kitchen standards at all times.

Requirements

• Certificate or Diploma in Culinary Arts, Professional Cookery or a related field is preferred.
• Basic knowledge of food preparation and cooking techniques.
• Ability to follow recipes, instructions and standard procedures accurately.
• Strong teamwork and willingness to learn from experienced chefs.
• Commitment to hygiene, food safety and kitchen cleanliness.
• Basic Food Safety or HACCP certification is an advantage.
• Flexible to work shifts, weekends and public holidays.
