What you will be doing:

  • Actively share ideas, opinions and suggestions to improve the environment and menus
  • Ensure storeroom requisitions are accurate to minimize repeat visits
  • Ensure all cold culinary Colleagues are aware of standards & expectations
  • Ensure proper weekly & annual vacation scheduling of all cold culinary Colleagues while maintaining Fairmont Dubai’s quality standards
  • Ensure the consistency in the preparation of all food items for a la carte and/or buffet menus according to property recipes and standards
  • Ensure proper hygiene as per Dubai Municipality
  • Ensure all grooming, spot check and temperature control sheets are filled as required
  • Complete monthly 1 on 1 probation & annual reviews as scheduled
  • Maintain cleanliness and proper rotation of product in both GM & Produce chillers
  • Minimize wastage / spoilage
  • Maintain consistent on the job training sessions for culinary Colleagues
  • Communicate effectively with the rest of the team and thrive for guest feedback

Your experience and skills include:

  • Ability to work well under pressure in a fast paced environment
  • Ability to work cohesively and collectively as part of a team
  • Previous experience as Sous Chef Banquets preferred
  • Previous experience in a 5 star property
  • Capable of working under high pressure
  • Highly responsible & reliable
